Ripe or “shu” puer gets that particularly earthy character from the piling fermentation step as the final stage of its production. The city was renamed “Puer” in 2007. It’s original name, Simao, means as “hard as rock” in the language of the local Pu people. They found a special bamboo growing in the area that was so sturdy they started using it to build houses and other structures.
